The dish is based on thinly sliced beef, which is cooked together with vegetables, tofu, and noodles in a sweet-savory broth made from soy sauce, sugar, and mirin. The cooked ingredients are often dipped in raw, beaten egg before eating.<\/p><h3 data-start=\"370\" data-end=\"388\">Ingredients:<\/h3><h4 data-start=\"390\" data-end=\"411\">For the Broth:<\/h4><ul data-start=\"412\" data-end=\"511\"><li data-start=\"412\" data-end=\"428\">160 ml mirin<\/li><li data-start=\"429\" data-end=\"444\">160 ml sake<\/li><li data-start=\"445\" data-end=\"465\">160 ml soy sauce<\/li><li data-start=\"466\" data-end=\"488\">320 ml dashi broth<\/li><li data-start=\"489\" data-end=\"511\">1 tablespoon sugar<\/li><\/ul><h4 data-start=\"513\" data-end=\"537\">Main Ingredients:<\/h4><ul data-start=\"538\" data-end=\"868\"><li data-start=\"538\" data-end=\"582\">700 g thinly sliced beef (e.g., sirloin)<\/li><li data-start=\"583\" data-end=\"623\">250 g firm tofu, cut into 2 cm cubes<\/li><li data-start=\"624\" data-end=\"691\">250 g mushrooms (shiitake, enoki, or preferred variety), sliced<\/li><li data-start=\"692\" data-end=\"725\">1 yellow onion, thinly sliced<\/li><li data-start=\"726\" data-end=\"763\">4 scallions, cut into 5 cm pieces<\/li><li data-start=\"764\" data-end=\"832\">1 small head of bok choy or napa cabbage, cut into 2-3 cm pieces<\/li><li data-start=\"833\" data-end=\"868\">250 g shirataki or udon noodles<\/li><\/ul><h4 data-start=\"870\" data-end=\"889\">For Serving:<\/h4><ul data-start=\"890\" data-end=\"927\"><li data-start=\"890\" data-end=\"911\">4 eggs (optional)<\/li><li data-start=\"912\" data-end=\"927\">Cooked rice<\/li><\/ul><h3 data-start=\"929\" data-end=\"947\">Preparation:<\/h3><h4 data-start=\"949\" data-end=\"976\">Preparing the Broth:<\/h4><p data-start=\"977\" data-end=\"1114\">In a medium saucepan, combine the mirin, sake, soy sauce, dashi broth, and sugar. Bring to a boil, then remove from heat and set aside.<\/p><h4 data-start=\"1116\" data-end=\"1146\">Ingredient Preparation:<\/h4><p data-start=\"1147\" data-end=\"1335\">Arrange the beef and tofu on separate plates, cover with plastic wrap, and keep in the refrigerator. Place the mushrooms, onion, scallions, and bok choy on a serving plate and set aside.<\/p><h4 data-start=\"1337\" data-end=\"1361\">Cooking the Rice:<\/h4><p data-start=\"1362\" data-end=\"1592\">Rinse the rice in a fine sieve until the water runs clear. Place it in a small pot, add 500 ml of water, bring to a boil, then reduce the heat to low. Cover and let it simmer until the water is fully absorbed (about 30 minutes).<\/p><h4 data-start=\"1594\" data-end=\"1622\">Cooking at the Table:<\/h4><p data-start=\"1623\" data-end=\"1783\">Set up a butane burner or electric hot plate in the center of the table. Place a shallow, thick-bottomed pan on top and pour in the broth. Bring it to a boil.<\/p><h4 data-start=\"1785\" data-end=\"1816\">Cooking the Ingredients:<\/h4><p data-start=\"1817\" data-end=\"1981\">Guests can cook their own ingredients in the broth to their preferred doneness.
