Potato wedges and creamy pepper sauce

Ingredients

For the steak
  • 1 Marble T-bone steak 600–800 g
  • salt and coarse sea salt
  • dried green peppercorns
  • a little olive oil
  • butter 50 g
  • garlic 2 cloves
  • thyme, fresh or dried 2 sprigs
  • rosemary, fresh or dried 1 sprig
For the potato wedges
  • potato wedges 300 g
  • a little olive oil
For the creamy pepper sauce
  • butter 1 tbsp
  • onion 1
  • garlic 1 clove
  • green peppercorns or crushed black pepper 1 tbsp
  • mustard 1 tsp
  • cooking cream 250 ml
  • salt

Method

The steak

First, season the T-bone with salt before cooking. Then place it in a hot, buttered pan and cook for 3 minutes on each side, followed by a further 2 minutes per side, while basting it constantly with the hot, herb-infused butter. Finally, cover it and let it rest for 7–8 minutes, so that the juices can settle evenly.

The sauce

First, soften the onion in butter until translucent, then add the garlic, followed by the pepper. After a brief toasting, stir in the mustard, then pour in the cooking cream and simmer until the sauce thickens and turns creamy. Finally, season with salt to taste.

The potatoes

Meanwhile, fry the potato wedges in a little oil for 7–8 minutes, until golden and crisp. Before serving, you can also scatter over grated parmesan and chopped parsley (optional).

To serve

First, brush the rested steak with the herb butter, then slice it along the bone. Finally, serve it with the crisp potato wedges and the creamy pepper sauce.

Tips

  • Also, take the steak out of the fridge 30–40 minutes before cooking, so that it doesn't hit the pan cold.
  • Above all, resting isn't optional, it's an essential step: otherwise the juices run out as you slice, leaving the meat drier.
